Sweet Spice Bread and a Chai Latte

Can you almost taste each ingredient, and feel your body’s health enhance, through the taste of allspice, cardamom, cinnamon, nutmeg and vanilla? I sure can, and I am ready to make a cake, for goodness sake!

So here we go, with a delightful (no fault) recipe from my dear sweet friend, we will begin!

It was lovely this past weekend, we had the chance to make this for a group of friends, who indulged in it with smiling faces… even the crumbs were savored (sprinkled on top of home-made yogurt, no less!). I was told that this recipe is incredibly versatile, and you can make it savory or sweet, with leftover smoothie, or with pureed vegetables as the liquid… the creative energy is yours!

Here is the recipe we made (with extra spice for fun):

“Quick ‘n’ sweet Bread with Topping”

Dry Ingredients (sift together):

2 cups of flour (mix wheat and white)
1 tbsp baking soda
1 pinch of salt
*2 tsp cinnamon
* 1/2 tsp allspice
*½ tsp ginger
* ¼ tsp nutmeg
*Pinch of cardamom
pinch of salt

Wet Ingredients (mix in a separate bowl):

2 eggs whisked
1 cup of milk or yogurt (or other liquid, like mashed 1/2 cup mashed fruit and 1/2 cup milk)
1/3 cup oil or butter melted (coconut oil is divine in this recipe!)
1 tsp vanilla extract

Topping:

½ cup oats
1/3 cup brown sugar
¼ cup butter
½ tsp vanilla
*1 tsp cinnamon
*1/8 tsp each of allspice, nutmeg, and cloves

*(I add more, because the spice is nice)

Lightly mix wet ingredients into dry ingredients
Sprinkle topping over cake
Pour into greased baking dish
Bake in a preheated oven at 350* for 20-25 minutes, or until a toothpick comes out clean
Kiss your fingers to your lips and enjoy a slice with a home made spiced Chai latte.

To this recipe I always add fresh slices of ginger for extra spice, and substitute soy mile for whole milk, and honey for sugar… whichever you prefer! Enjoy! We did it!
